If one of your New Year’s Resolutions is to get more vegetables into your family’s diet then give this easy green juice recipe a try. Packed with goodness, this got two thumbs up from my own kids, who sometimes struggle to eat veg… and it’s just as good for Mum and Dad too.
I feel I need to rave about this kale juice if only because my daughter – you know, the fussy eater, won’t eat vegetables one – loves it. I know, kale.
If like me, you’re struggling to get your child to eat their five a day (or even one a day) then try this. In fact, try juicing veg full stop. With my daughter it’s the texture of vegetables she doesn’t like, so turning veg into juice removes that barrier, and then it becomes all about taste. If it tastes good – and this juice does – then you’re half way there.
An earlier version of this juice was one of the first recipes published on Meals Our Kids Love! when we first launched, but I’ve modified it slightly to give it less of a powerful lemon and ginger punch which some children might find a bit much. I’ve added extra apple, cut back on the lemon and suggested that the ginger is purely an optional extra. And it’s great for mums and dads too – I make this for myself about once or twice a month and feel ridiculously virtuous for it (and then I go and eat a chocolate bar to make up for it).
It wasn’t so long ago that kale was having its moment in the spotlight as yet another superfood we should all be eating. Attention may now have shifted to the latest food fad, but kale remains a fantastic vegetable on all fronts. Take a look at our little All About Kale box and see what I mean.
On the subject of juicing, there’s now so much choice in terms of juicers on the market it’s quite confusing. If you’re interested in what I use, it’s the Sage by Heston Blumenthal Nutri Juicer Plus which I love! It does a really quick and efficient job of making juice in seconds. - 200g kale, washed and with stalks removed
- handful of mint (optional)
- 1/2 lemon, peeled
- 2 whole apples
- 1cm ginger, peeled (optional)
- Add the ingredients to your juicer in the order of the ingredients listed above.
- Juice until all the juice is extracted.
- Pour into a glass and stir.
- Serve immediately.
